Guess who’s back?

i'm drugged.

The e-vet called this morning around 8:30 to let us know Grady kept food down all night and we could take him home. He’s on strict bedrest for the next two weeks and has so many pills we actually made a Google document with a schedule, but at least he’s in our care now.

But he’s eating!

Although he absolutely cannot do so. We’re on guard for two things now. Internally, we’re hoping for a full recovery of his intestines – as the walnut bumped around in a too-small space, it bruised the intestines and some of the tissue became necrotic. Since he’s so young, it should fully heal. Externally, we have to watch his sutures carefully. He’s such a large dog, which means his belly is quite heavy, so he must move very minimally to avoid popping open the sutures until they close. We’re just so happy to have the bear home. It was too quiet without him!

Needless to say, we didn’t have the best spring break, and lost sight of cooking after the first few days. To get us back on track [and away from the insane amount of stress eating I did over the last two days], I whipped up something quick, healthy and comforting tonight because we definitely needed it: Vegan Mac & Cheese.

No butter or flour, or even vegan butter in this. I wish I could provide a recipe, but honestly it was just an exercise in tossing and stirring. I can give you a run-down:

Two servings of pasta, cooked and drained. Then, a “roux”: onion, garlic, chickpeas and…. pumpkin. The secret ingredient! Toss in red chili flakes, pepper, onion powder and the pasta. Top with two servings vegan cheese [I used one cheddar, one mozzarella], some unflavored soy milk, a tablespoon of nutritional yeast, mustard, salt and pepper, stir to combine. Steam the kale on top, mix it all in, and top with bread crumbs. Voila.

With that, I must go hug my dog, and try to get some sleep.
