BBQ Tofu & Slaw Wraps

The key to a good lettuce wrap is a firm lettuce. I’m usually  fond of napa cabbage for wraps, but Shaun found this romaine lettuce at Whole Foods that we couldn’t pass up. It made long wraps, but delicious ones. It certainly doesn’t hold a candle to the Fu-Q BBQ at Barbeque Exchange, but it’s definitely a lighter option and still a Superbowl win.

and slaw, of course.

Vegan BBQ Wraps with Broccoli Slaw

Prep Time: 15-20 minutes

Serves: 2

  • 4 pieces firm lettuce or cabbage, for the wraps
  • 2 servings extra-firm tofu
  • 5-6 baby portobello mushrooms, sliced thin
  • 1/2 red onion, sliced thin
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1/2 package broccoli slaw [Whole Foods has a small box]
  • 3 tbsp barbecue sauce of your choice
  • 3 tbsp vinegar, divided
  • 2 tbsp water
  • 1 tbsp veganaise
  • Juice of 1/2 lemon
  • 1/2 tbsp celery seed
  • Salt and pepper, to taste

For the Slaw: In a large bowl, combine the slaw, lemon juice, celery seed, salt, pepper, 1 tbsp of the vinegar and veganaise, toss until well mixed. Refrigerate until ready to serve.

For the BBQ: Saute the onion, garlic and celery for about 5 minutes. Meanwhile, in a small bowl whisk the bbq sauce, 2 tbsp of vinegar, 2 tbsp of water, salt and pepper. Shred the tofu and add the tofu, mushrooms and sauce to the saute pan, stirring occasionally. Allow the sauce to cook down, 3-4 minutes.

Assemble the Wraps: Lay out the lettuce and pour the tofu BBQ into the crease. Top with slaw, fold, and eat.
