Vegan Pimento

My first real experience with pimento cheese dip [other than free samples at Kroger] was at Tupelo Honey Cafe in Asheville over New Year’s. What’s not to love about mayo and cheese? But it got me thinking: what if I could re-create the flavor and texture without the cheese and mayo? Booya, vegan pimento “cheese” dip is born. Veganaise has a flavor so close to regular mayo I dont think anyone could tell the difference, so it’s probably really easy to “trick” the best of them with this cholesterol-free vegan version of a Southern classic. Perfect for the Superbowl, and the leftovers almost certainly will make it onto a vegan grilled cheese this week…

Vegan Pimento “Cheese” Dip (Vegan, Vegetarian)

Inspired by this pimento recipe on Serious Eats.

Prep Time: 5-10 minutes

Serves: A party!

  • 3 servings [either 9 ounces total or 3/4 cup total, depending on the brand] vegan cheddar & jack cheese blend
  • 5 tablespoons veganaise [I used dijon veganaise for an extra kick]
  • One 4-ounce can of pimentos
  • Juice of 1/2 lemon [a SMALL lemon! don’t want too much liquid]
  • 1 garlic clove, minced
  • 1 tbsp vegan worcestershire sauce [yes, there’s a vegan version]
  • 2-3 tsp hot sauce of your choice
  • Salt and pepper, to taste

Combine all ingredients in a food processor and pulse until blended but still chunky. Refrigerate for at least 30 minutes prior to serving [on homemade pita chips, of course!]
