Baby Birthday Cake


Happy 20th +/- a few years birthday to Shaun! My all-star fiance. The one who deals with my whining and mess-ups and is as obsessed with coffee as me and helps me win trivia. We’ll be spending the day out celebrating at Blue Mountain Brewery [one of his favorite places in town], but I’ll give you a cyber-taste of part of his gift: a mini chocolate stout cake with [vegan] vanilla stout buttercream and chocolate pretzels. It’s only a baby cake [6″], but still I got to make a mess in the kitchen:

The star was a Bell’s stout. Bell’s is turning out to be a good cooking beer.

The baby cake baked for about a half hour, then cooled and was transferred to a baker’s box.

From there, I iced it with a vegan buttercream frosting made with more bell’s stout, vanilla, whey sugar [essentially fake confectioner’s sugar] and earth balance.

Once completed, it got the finishing touch: chocolate covered pretzels for garnish.

Shaun used the remainder of the pretzels to scoop up the leftover icing. I’ll let you know what he thinks of the cake, but for now, we’ve got a birthday to celebrate! Have a great weekend!

For the recipe, head over to Serious Eats. My substitutions were too numerous to even list, but included fat-free sour cream, applesauce instead of butter, earth balance instead of butter, splenda, egg whites only, halved the recipe, didn’t use Guinness, cooked it in a 6″ round cake pan instead of as cupcakes, I basically don’t follow directions.
