60 Coffee Beans, Tom Marvolo Riddle, Fauxcotta

I’m not sure who was on our side Tuesday night, but it was someone awesome. Shaun and I finally claimed victory at Fellini’s Trivia Night. Woo! We were always the trivia underdogs: the team of two against tables of six. But last night was made for us. Two of the four categories were “Weight Loss” and “Fitness and Exercise” [We were the only team who knew exactly how many calories equals a pound. Told you I am neurotic], one of the bonus rounds was “Coffee,” and the final question, in which we decided to wager it all, was, “What was Lord Voldemort’s real name in Harry Potter?” Seriously? Seriously? Destiny. I think so. Fellini’s is so much fun. We have yet to try their brunch, but we’re on our way to becoming trivia regulars.

Before trivia, I put together a simple stuffed pepper with – you guessed it – kale. I decided to try making tofu ricotta [Shaun likes to call it “fauxcotta”] to stuff the peppers with. I’m pretty pleased with Whole Foods’ recipe, although I think the tofu I used was a little too firm because it didn’t turn out as creamy as I thought it would.


The kale and onion was doused with the lemon and parsley from the ricotta, I stuffed the peppers with the ricotta, peas and carrots, and everything roasted for 20 minutes at 400 degrees.


The “ricotta” browned, but did dry out a little bit. Maybe more tahini next time? I didn’t do anything to the recipe other than reduce it proportionally, so take a look over at Whole Foods for the ingredients.
