The Newest One-Pot Creation

I completely forgot to share some photos from before the new year, when Grady had a play date with two of my old friends, Laura and Greg, and their new puppy, Murphy. He’s a 3.5 month old golden, and he’s got the biggest eyes you’ll ever see. He held his own with giant Grady, and definitely showed him who’s boss. Check him out, you’ll fall in love:

And now that I have your attention… Shaun made a new crock pot soup! Red lentil and sweet potato soup, to be exact:


Cooked in the crock pot all day, the lentils disintegrated into the sweet potato and created a thick, creamy broth. There are some cool spices in here [coriander seeds, e.g.], but the sweet potato reigns supreme, as it should. This soup came with the Coen brothers’ first movie: Blood Simple. At under 90 minutes, it was perfect for me, and a really funny noir flick, too. Shaun got the Coen brothers’ box set for Christmas, so we’re making our way through chronologically.

Sweet Potato Soup with Red Lentils (Vegan, Vegetarian)

Prep Time: 5-6 hours

Serves: 4

Tools: Crock Pot


  • 1 onion, chopped
  • 1 tbsp olive oil
  • 2 cloves chopped garlic
  • 5 cups water
  • 1 cup red lentils
  • 2 tsp sea salt
  • 1 1/2 tsp ground coriander
  • 1 1/2 tsp paprika
  • 1 tbsp cumin
  • 1 tsp red pepper flakes
  • 12 ounces of cubed sweet potato
  • 4 cups spinach, sliced thin
  • Salt and pepper, to taste


1. Cook the onion, garlic, and olive oil in a saute pan until soft.

2. Combine the onion and garlic mixture with the remainder of the ingredients in a crock pot.

3. Cook on high for 2-3 hours, and low for the remainder.

    This sounds so hearty and delicious, perfect for a winter dinner! I especially love the red pepper flakes for some kick.

      Ugh, I could put red pepper flakes into anything. Testing my spiciness limits is my new favorite game. And, thank you!!

    OOOOO Sooo cute!!!! My two favorite dogs ever!! My two goldens passed away this summer, 14 and 12 years old. I miss them terribly. I simply adore goldens. Bernese are also total favorites of mine!! Always wanted one.

      I definitely recommend Berneses. He’s basically a kitten, even though he’s still six months old. I’m sorry to hear about your pups, that was one of the hardest things [when I lost my childhood dog], but it looks like you had a long and happy life with both of them 🙂
