A Funny Thing Happened at the Kroger

I’m not sure what it is. My best guess is they’re trying to compete with Whole Foods. For whatever reason, I’m thankful because someone at Kroger FREAKED OUT and their vegan products were on sale last weekend. I’m not talking like, 20% off. I’m talking like, I got a block of tofu for $1; two different kinds of soy sausages for $1; and falafel for $1. The vegan cheese was also $1, so were soy yogurts and puddings. What? It was a beautiful shopping trip. I just kept coming back to the cart [which Shaun was closely guarding in the deli section] with more things screaming, “IT’S ONLY A DOLLAR!”* Now our fridge is filled with vegan meat substitutes and we’re like, crap, it’s almost Thanksgiving.

The falafel inspired a greek salad for dinner, which inspired me to recreate a sauce I had a bit too much of in Greece – tzatziki. It’s so easy to make, and cheaper than buying a pre-made tub. It’s perfect if you blend it enough to combine the ingredients but not enough to smooth out the cucumber. That way, it’s chunky. I bet dipping this in pita would also be a win. It’s not Athens, but it’ll do.

Tzatziki (Vegetarian)

Prep Time: 2 minutes

Tools: Blender


  • 1 container 0% Greek yogurt
  • Juice of 1/2 lime
  • 1/3 of a cucumber, diced
  • 1 tbsp dill


Combine everything in a blender and blend. Store in the fridge. Put it on things.
